In the novel “The Kite Runner”, Khaled Hosseini discusses many different types of food from Afghanistan. Tea was mentioned a few times as Baba retreated to his reading area and drank tea with Rahim Khan. Food is the epicenter of being a guest in an Afghan house because the host takes pride in what he/she serves. A person who is welcomed into the household, that person will be offered the best that the family has to present. They will constantly fill your tea glass and offer snacks until you cover your glass with your hand and say that you’ve had enough. In the “Kite Runner”, Baba drank tea often and used it as a way to sit and talk with others. The tea of choice would be Afghan Black Tea with milk and cardamom spice. Cardamom is a very aromatic spice that is common in Middle Eastern cooking. Usually Afghan cuisines are full of strong aromas and flavors, with spices including saffron, cilantro, black pepper, coriander and cardamom.

Naan is flat bread that is frequently served that is oven baked that is very versatile in use. It can be served plain, brushed on with melted butter, with meat or used to dip in soup or dips. It is very traditional and served with dinner very often. Kabobs are a popular choice of fast food in Afghanistan. They are prepared by skewering large pieces of beef or lamb, marinated for tenderness and flavor and then placed on a hot grill. The marinate usually consists of garlic, oil, and various herbs and spices. Cilantro chutney which is usually seen in afghan cuisine, is also a very versatile, where it can be used as a marinate or a dipping sauce.

Fried or steamed dumplings are presented as appetizers. These dumplings contain ground lamb or beef. They are usually prepared with a yogurt sauce or the cilantro chutney. The yogurt sauce is very well-known but simple enough to make at home. It contains plain yogurt with chopped garlic and salt. It is plated with the dumplings as a sauce served and topped off with ground beef.
